Mini Chicken pot pies

We LOVE chicken pot pie around here. It's such a great comfort food. Paired with a fresh salad, it makes a great lunch or dinner. It seems that when we eat it old school, someone always ends up with a pile more than a slice. So, I decided to whip up a batch of these individual pies to make them easier to serve. I would think these would even travel well to a brunch or pot luck supper! Best part, you won't have to spend hours preparing them!

Pot pie filling:
1 can Chicken a la King
1 can Veg-all
1 can cream of chicken soup
1 chicken breast, boiled and shredded
dash of salt, pepper, and garlic powder
Start with a can of Grands Biscuits. Divide each biscuit in half, and place the first half in a lightly sprayed muffin tin. Top this with a scoop of super easy chicken pot pie filling, and cover with the other biscuit half, tucking it in a little.
See how beautifully they puff up in the oven? They just scream out, "Eat me!" :-)
Plate with a salad, break open, and enjoy! Meredith

Psssst....Want to know a secret?

Can I give you a little tip? Good food REALLY can be simple. Here's my NO fail dinner, great for those anticipated lazy days of summer:

1 large pork shoulder (might be packaged as pork butt. I didn't name it!)
1 large bottle of Sweet Baby Ray's BBQ sauce
1 onion sliced thin

That's it. Put the pork in the crock pot on low. I like to put mine in with the fat side up so that the juices run down the meat as it's cooking. It also makes it SUPER easy to skim off before you shred later. Cover that pork with the sauce and sliced onion, put the lid on, and don't TOUCH it for at least 15 hours. When you're ready, skim that layer of fat off the top, find the two or three large bones that will probably be completely free of the tender meat, and toss them.

I like to shred my meat, drain off some of the juice, and put it back in the crock pot for another hour with another bottle of BBQ sauce. I have also put it on a sheet of foil, and popped it on the grill with some mesquite chips in the smoker box. There really is no wrong way to serve this easy barbecue!

One pork shoulder will yield 12-15 servings, so if you're making it for your family, it's a great way to knock out 2 or even 3 meals at once!  BONUS!  :-)

I "Dyed" a little :-/

I love color. Colored food looks pretty, and it seems like brightly hued cereals and snacks should be more fun to eat, right? I have been in the, "Eh, what's a little food coloring every now and then?" camp, until I recently found my son to be nearly uncontrolable after eating a huge bowl of fairly popular breakfast cereal.

I have recently begun looking into where the colors we consume so regularly come from, and the results are SHOCKING! Due to this research, I am DETERMINED to weed out as much food coloring as I possibly can from our home! I am going to be purchasing a set of natural food dyes to be used in my future posts. I DO want food to be fun for my kids AND yours. I just want to bring you foods that I am confident will allow them all to be the best kids they can be! I will be sure to let you know how our new adventure in natural food coloring is going. :-)

Our Good Friday lunch

I wanted to do something to really hit home the meaning of Easter this year, so I came up with a last supper/food from the region meal. I used flat bread crackers, and I topped them with olive hummus, gave them a boiled egg, (Though I could not find one reference to these beauties in the Bible, it stands to reason that they COULD have had them, since they had birds, right?) a mixed green salad, dried fruit, and an empty tomb dessert, made with a graham cracker topped with green coconut and half a doughnut. I think it turned out great, and it really opened the door for discussion about the various parts of the Easter story.   Continuing our theme, this last supper was served with a cup of grape juice.

Bugging Out




We celebrated the work of author Eric Carle with some of his famous books, bug activities, and VERY fun and easy bug food! My kids ate a huge feast, and the funny thing was, most of it was veggies!

Couldn't resist making a batch of bugs on a log.

While I had read The Very Hungry Caterpillar many times, I don't think I had read Eric Carle's other works before. We all enjoyed them SO much! Check some out at your local library, and cozy up with some creepy crawly snacks for an afternoon you and your kids won't soon forget!
